  • 3 medium zucchini
  • 2 tbsp pink salt divided
  • 1/2 lb ground chicken
  • 1 tbsp green onion
  • 1/2 tbsp cilantro
  • 1 tbsp finely minced ginger
  • 1 clove minced garlic
  • juice of half a lemon


  • In a medium bowl combine chicken, green onions, cilantro, ginger, garlic, and red pepper flakes
  • Mix until well combined
  • Set aside while you prepare zucchini
  • Preheat oven to 350. Line baking sheet with parchment paper or a silicon mat
  • Using a mandolin, or a very sharp knife, slice that zucchini length wise into flat strips
  • Arrange the zucchini (4 per dumpling) in a star shape
  • Cover with lemon juice to keep from browning as you assemble the dumplings
  • Place 1 to 1 ½ Tbsp of filling in the center of the zucchini star
  • Wrap the zucchini around the filling to cover completely
  • Flip over on the baking sheet and bake for 15-20 minutes or until the zucchini is golden and
  • Remove from oven and let cool. Enjoy
