In a medium bowl combine chicken, green onions, cilantro, ginger, garlic, and red pepper flakes
Mix until well combined
Set aside while you prepare zucchini
Preheat oven to 350. Line baking sheet with parchment paper or a silicon mat
Using a mandolin, or a very sharp knife, slice that zucchini length wise into flat strips
Arrange the zucchini (4 per dumpling) in a star shape
Cover with lemon juice to keep from browning as you assemble the dumplings
Place 1 to 1 ½ Tbsp of filling in the center of the zucchini star
Wrap the zucchini around the filling to cover completely
Flip over on the baking sheet and bake for 15-20 minutes or until the zucchini is golden and
firm
Remove from oven and let cool. Enjoy
