Vanilla (or Chocolate) Almond Forgotten Cookies

  • 1 cup egg whites
  • 1/2 cup chopped almonds
  • 1 scoop Blue Bonnet French Vanilla protein powder
  • 1/2 tsp xanthan gum
  • 1 dropperful Stevia
  • 1/2 - 1 tbsp unsweetened cocoa powder optional


  • Preheat oven to 350 degrees and line baking sheets with parchment paper or greased foil
  • Beat egg whites in bowl with hand mixer until stiff peaks form
  • Slowly add in protein powder while continuing to run mixer
  • Add xanthan gum and mix another minute
  • Fold in stevia, almonds, and cocoa powder (if desired)
  • Drop 48 heaping teaspoons onto baking sheets
  • Place in oven and turn it off
  • Leave in oven overnight (or for ~12 hours)
