Vanilla (or Chocolate) Almond Forgotten Cookies

- 1 cup egg whites
- 1/2 cup chopped almonds
- 1 scoop Blue Bonnet French Vanilla protein powder
- 1/2 tsp xanthan gum
- 1 dropperful Stevia
- 1/2 - 1 tbsp unsweetened cocoa powder optional
Get Recipe Ingredients
Preheat oven to 350 degrees and line baking sheets with parchment paper or greased foil
Beat egg whites in bowl with hand mixer until stiff peaks form
Slowly add in protein powder while continuing to run mixer
Add xanthan gum and mix another minute
Fold in stevia, almonds, and cocoa powder (if desired)
Drop 48 heaping teaspoons onto baking sheets
Place in oven and turn it off
Leave in oven overnight (or for ~12 hours)
