Ingredients
- 2 cups spring mix
- 1/4 cup salsa
- 1 cup frozen chopped onions & peppers mix
- 1/2 cup edamame
- 8 oz ground turkey
- 6 grape tomatoes sliced
- 1/2 cup plain greek yogurt
- 1 tbsp taco seasoning
- 2 jalapeno ring slices chopped fine
Instructions
- Brown turkey in skillet
- Place spring mix and tomatoes in large bowl and drizzle with salsa
- Add edamame, pepper, onions & peppers to skillet then cover and cook, stirring occasionally
- When veggies are softened, stir in taco seasoning
- Transfer mixture from skillet into salad bowl
- Top with Greek yogurt
