  • 4 bell peppers
  • 8 oz ground chicken
  • 1 cup baby spinach
  • 1 cup cottage cheese
  • 1/2 cup chopped tomatoes
  • spices of choice to taste


  • Preheat oven to 350 degrees
  • Cook chicken with spices in skillet then transfer to bowl
  • Slice tops off of peppers and place in to baking pan
  • Chop tops and add to bowl with chicken
  • Stir in spinach, tomatoes, and cottage cheese
  • Spoon mixture into each pepper
  • Bake for 30-45 minutes

Alternatively, you can hollow out and stuff tomatoes instead of peppers
