Stuffed Bell Peppers (or Tomatoes)

- 4 bell peppers
- 8 oz ground chicken
- 1 cup baby spinach
- 1 cup cottage cheese
- 1/2 cup chopped tomatoes
- spices of choice to taste

Preheat oven to 350 degrees
Cook chicken with spices in skillet then transfer to bowl
Slice tops off of peppers and place in to baking pan
Chop tops and add to bowl with chicken
Stir in spinach, tomatoes, and cottage cheese
Spoon mixture into each pepper
Bake for 30-45 minutes
Alternatively, you can hollow out and stuff tomatoes instead of peppers
