Ingredients

  • 4 oz baby spinach
  • 2 tbsp chopped parsley
  • 2 scallions
  • 2 tbsp chopped garlic
  • 4 large mushrooms
  • 1/4 cup part skim ricotta cheese
  • 1/4 cup grated parmigiano reggiano
  • 1/4 tsp pink salt or to taste
  • 1/4 tsp fresh ground pepper
  • 8 large mushrooms stems removed

Instructions

  • Combine spinach, parsley, scallions, garlic, 4 mushrooms, cheeses, pink salt, and pepper in a food processor/blender to form a paste
  • Spoon 1/8 of the paste into each large mushroom cap
  • Broil until brown on top
