Ingredients
- 4 oz baby spinach
- 2 tbsp chopped parsley
- 2 scallions
- 2 tbsp chopped garlic
- 4 large mushrooms
- 1/4 cup part skim ricotta cheese
- 1/4 cup grated parmigiano reggiano
- 1/4 tsp pink salt or to taste
- 1/4 tsp fresh ground pepper
- 8 large mushrooms stems removed
Instructions
- Combine spinach, parsley, scallions, garlic, 4 mushrooms, cheeses, pink salt, and pepper in a food processor/blender to form a paste
- Spoon 1/8 of the paste into each large mushroom cap
- Broil until brown on top
