Ingredients

  • 1 small cauliflower head
  • 4 oz spinach
  • 1/2 cup mozzarella cheese
  • 12 eggs
  • pink salt and pepper, to taste

Instructions

  • Preheat oven to 400 degrees
  • Boil cauliflower until just about soft, drain
  • In a food processor blend cauliflower, spinach and mozzarella cheese
  • Place about 1/4 to 1/3 cup mixture in a cupcake tin
  • Press mixture up the sides of cupcake tin to form a cup
  • Bake about 30 minutes
  • At this point, "cups" can be cooled and frozen for later use, if desired (21 calories per "cup")
  • Turn oven down to 350 degrees
  • Crack an egg in center of each cup
  • Bake for 20 minutes or until egg is desired consistency
