Preheat oven to 400 degrees
Boil cauliflower until just about soft, drain
In a food processor blend cauliflower, spinach and mozzarella cheese
Place about 1/4 to 1/3 cup mixture in a cupcake tin
Press mixture up the sides of cupcake tin to form a cup
Bake about 30 minutes
At this point, "cups" can be cooled and frozen for later use, if desired (21 calories per "cup")
Turn oven down to 350 degrees
Crack an egg in center of each cup
Bake for 20 minutes or until egg is desired consistency
