Ingredients

  • 1 lb ground turkey browned in skillet
  • 4 cups cauliflower florets
  • 2 tbsp olive oil
  • 1 onion chopped
  • 3 - 4 cloves garlic minced
  • 4 medium tomatoes chopped
  • 1 chili pepper deseeded and chopped
  • 1/2 tsp chili flakes
  • 1/2 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp garlic powder
  • 1 cup chicken stock or water
  • 1/2 cup cilantro fresh, chopped
  • 1 tsp lime juice
  • 10 jalapeno pepper slices more or less, to taste
  • pink salt and pepper to taste

Instructions

  • Place cauliflower florets in food processor and pulse a few times until rice-like consistency is reached
  • Heat olive oil in large skillet over medium heat
  • Add onion, garlic, and chili and sauté 5 minutes
  • Stir in tomatoes, stock, oregano, cumin, and chili flakes
  • Bring to simmer and cook for 20 minutes
  • Add cooked turkey, garlic powder, salt and pepper
  • Top with jalapeno slices, cilantro and lime juice before serving
