- 1 lb ground turkey browned in skillet
- 4 cups cauliflower florets
- 2 tbsp olive oil
- 1 onion chopped
- 3 - 4 cloves garlic minced
- 4 medium tomatoes chopped
- 1 chili pepper deseeded and chopped
- 1/2 tsp chili flakes
- 1/2 tsp cumin
- 1 tsp oregano
- 1/2 tsp garlic powder
- 1 cup chicken stock or water
- 1/2 cup cilantro fresh, chopped
- 1 tsp lime juice
- 10 jalapeno pepper slices more or less, to taste
- pink salt and pepper to taste

Place cauliflower florets in food processor and pulse a few times until rice-like consistency is reached
Heat olive oil in large skillet over medium heat
Add onion, garlic, and chili and sauté 5 minutes
Stir in tomatoes, stock, oregano, cumin, and chili flakes
Bring to simmer and cook for 20 minutes
Add cooked turkey, garlic powder, salt and pepper
Top with jalapeno slices, cilantro and lime juice before serving
