Ingredients

  • 5 oz snapper
  • 8 oz tomatoes
  • 1 tsp minced onion
  • 1/2 tsp garlic powder
  • 1/4 tsp rosemary
  • 1/8 tsp sage
  • 1/2 tsp chili powder
  • 1/4 tsp mustard powder
  • 1/8 tsp pepper
  • 1/8 tsp ground ginger

Instructions

  • Preheat 1/4 c water in large skillet over medium-high heat
  • Cut tomatoes in fairly large chunks
  • Place tomatoes and spices in skillet and stir well
  • Cover and simmer for about 5 minutes
  • Stir and simmer a couple more minutes
  • Carve out a spot in the middle for the fish & lay it in the pan
  • Cover and cook another 3 minutes
  • Flip fish
  • Cover and cook 3 more additional minutes
