Ingredients
- 5 oz snapper
- 8 oz tomatoes
- 1 tsp minced onion
- 1/2 tsp garlic powder
- 1/4 tsp rosemary
- 1/8 tsp sage
- 1/2 tsp chili powder
- 1/4 tsp mustard powder
- 1/8 tsp pepper
- 1/8 tsp ground ginger
Instructions
- Preheat 1/4 c water in large skillet over medium-high heat
- Cut tomatoes in fairly large chunks
- Place tomatoes and spices in skillet and stir well
- Cover and simmer for about 5 minutes
- Stir and simmer a couple more minutes
- Carve out a spot in the middle for the fish & lay it in the pan
- Cover and cook another 3 minutes
- Flip fish
- Cover and cook 3 more additional minutes
