Riceless Shrimp Gumbo

  • 5 oz cooked shrimp
  • 1.5 cups okra
  • 1 cup chicken stock
  • 1 cup water
  • 1 tsp cajun seasoning add more to preferred spice level
  • 2 tsp minced garlic
  • 1 tbsp onion powder
  • 1/4 tsp xanthan gum
  • pink salt, to taste


  • Bring water and chicken stock to simmer in saucepan
  • Add okra and garlic then cover with lid and cook until okra is tender
  • Stir in Cajun Seasoning and onion powder then cover with lid and cook 2 minutes
  • Whisk xanthan gum into saucepan and cook 2 more minutes
  • Cut shrimp into bite sized pieces and add to saucepan
  • (optional) - if in phase 6, try adding andouille sausage for a more traditional gumbo dish. calorie count will be affected.
