Ingredients

  • 1 lb lean ground beef
  • 1 onion, yellow or white chopped
  • 2 green peppers chopped
  • 8 oz mushrooms sliced
  • 5 mild or hot pepper rings chopped
  • 2 tbsp coconut cream canned
  • 1 tbsp butter
  • 2 oz mozzarella cheese
  • 1 cup riced cauliflower
  • 1/4 cup Easy Ketchup
  • pink salt and pepper to taste

Instructions

  • Brown beef in skillet then transfer to bowl and set aside
  • Melt butter in skillet
  • Add onion, peppers, pepper rings, and mushrooms and cook until softened
  • Stir in pink salt, pepper, coconut cream, riced cauliflower, and cheese
  • Cover and allow to cook a few minutes, until cheese is melted
  • Stir in Easy Ketchup
  • Portion into 4 bowls
