Ingredients

  • 2 tbsp coconut flour
  • 1/4 tsp vanilla
  • 1/2 tsp vinegar
  • 1/4 tsp baking soda
  • 8 drops liquid Stevia
  • 1/4 cup unsweetened almond milk
  • 3 tbsp egg whites
  • 1 pineapple ring or 1/8 cup crushed pineapple
  • 1 - 2 pitted cherries

Instructions

  • Place pineapple in bottom of mug and place cherry in center
  • Combine coconut flour, vanilla, vinegar, baking soda, stevia, and almond milk in small bowl
  • Whisk in egg whites
  • Pour batter over pineapple and cherry
  • Microwave 2-3 minutes (or bake at 350 for 20-30 minutes)
