Ingredients

  • 14.5 oz can salmon
  • 1 carrot finely chopped
  • 1/2 red bell pepper finely chopped
  • 4 eggs
  • 1 tbsp minced onion flakes
  • 1 tbsp dill
  • 1 tsp lemon pepper
  • 1/8 tsp celery seed
  • 1/2 tsp pink salt
  • 2.5 tbsp coconut flour

Instructions

  • Preheat oven to 425 degrees
  • Line baking sheet with parchment paper
  • Combine salmon, carrots, and bell pepper in bowl
  • Add in eggs and spices, mixing with hands until well incorporated
  • Add coconut flour and mix again with hands
  • Scoop out 1/3 cup mixture and form into patty on baking sheet
  • Repeat 5 more times
  • Bake for 10-15 minutes, until golden brown*

*Alternatively, fry each patty in coconut oil for 2-3 minutes per side in hot skillet)
Excellent served with Easy Tartar Sauce
