Ingredients

  • 6 oz cod
  • 1/2 cup tomato sauce no sugar added
  • 1/2 cup Italian diced tomatoes
  • 8 oz Sage Cauli Stuffing or plain riced cauliflower
  • 8 drops Stevia
  • 1/2 tsp paprika
  • 1/8 tsp cinnamon
  • 1 tbsp parsley
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1 clove minced garlic
  • lemon juice
  • pink salt and pepper, to taste

Instructions

  • Preheat oven to 350 degrees and line baking sheet with parchment paper
  • Place cod on baking sheet and coat with lemon juice
  • Bake for 12 - 15 minutes
  • In saucepan over medium-high heat, combine tomato sauce, diced tomatoes, garlic, and spices
  • Cook, stirring frequently, until heated
  • Plate cauliflower, then cod, then sauce on top
