  • 1.25 cups light olive oil, divided not extra virgin olive oil
  • 1 egg
  • 1/2 tsp mustard powder
  • 1/2 tsp salt
  • 1 - 4 tbsp lemon juice


  • Make sure all ingredients are room temperature before starting recipe
  • Place the egg, 1/4 cup olive oil, mustard powder, and salt in blender or food processor (or use stick blender)
  • Mix thoroughly
  • Slowly drizzle remaining 1 cup olive oil in while food processor or blender is running
  • After mixture has completely combined, stir in lemon juice to taste with a spoon
