  • 3 Paleo Wraps
  • 1/2 tbsp coconut oil
  • 1/2 cup green cabbage shredded thin
  • 1/2 cup carrot shredded
  • 1/2 cup zucchini shredded
  • 1/4 cup basil fresh, chopped
  • 1/4 cup chopped cilantro or parsley


  • Preheat oven to 350 degrees
  • Melt coconut oil in skillet over medium heat
  • Add veggies and herbs and cook about 5 minutes, until softened
  • Place Paleo Wraps on flat surface so they look like a diamond, not square
  • Spoon 1/3 of veggie mixture onto each Paleo Wrap
  • Fold bottom corner up, sides in, then roll toward top corner to close egg roll
  • Transfer to greased or parchment-lined baking sheet
  • Bake about 5 minutes or until golden brown

Alternatively, you can pan fry egg rolls in a greased skillet turning every 30 seconds until golden brown
