Preheat oven to 350 degrees
Melt coconut oil in skillet over medium heat
Add veggies and herbs and cook about 5 minutes, until softened
Place Paleo Wraps on flat surface so they look like a diamond, not square
Spoon 1/3 of veggie mixture onto each Paleo Wrap
Fold bottom corner up, sides in, then roll toward top corner to close egg roll
Transfer to greased or parchment-lined baking sheet
Bake about 5 minutes or until golden brown
