Ingredients
- 4 cups riced cauliflower about one medium head
- 1 egg beaten
- 1/3 cup soft goat cheese chevre
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- 1/8 tsp salt
Instructions
- Preheat your oven to 400 degrees
- Pulse raw cauliflower florets in a food processor, until a rice-like texture is achieved
- Steam cauliflower in saucepan in 1" of water for 4 minutes (or microwave, covered)
- Drain cauliflower and transfer into a clean, thin dishtowel
- Squeeze excess moisture out of cauliflower
- In a large bowl, mix cauliflower, egg, goat cheese, and spices
- Press the dough out onto a baking sheet lined with greased parchment paper about 1/3" thick
- Bake for 25-30 minutes, until starting to brown
- Add additional toppings (sauce, cheese, etc.) and return to oven to bake 5-10 more minutes OR wrap pizza crust in foil and freeze it for a quick "frozen pizza" to enjoy another night (just add toppings and bake at 400 for 5-10 minutes when ready to eat)
