Crustless Pumpkin Pie

Ingredients

  • 2 eggs
  • 1 cup pumpkin puree
  • 1/2 cup unsweetened almond milk
  • 2 dropperful SweetLeaf vanilla creme stevia
  • 1 tsp pumpkin pie spice or more, to taste
  • 1/4 tsp pink salt

Instructions

  • Preheat oven to 350 degrees
  • Grease pie pan lightly with coconut oil
  • In a medium-sized bowl, slightly beat eggs
  • Whisk in pumpkin puree, stevia, salt, spice, and almond milk
  • Pour batter into prepared pan
  • Bake for approximately 1 hour
  • Check to see if toothpick inserted into center comes out relatively clean
  • Remove from oven and allow to cool
