Ingredients
- 2 eggs
- 1 cup pumpkin puree
- 1/2 cup unsweetened almond milk
- 2 dropperful SweetLeaf vanilla creme stevia
- 1 tsp pumpkin pie spice or more, to taste
- 1/4 tsp pink salt
Instructions
- Preheat oven to 350 degrees
- Grease pie pan lightly with coconut oil
- In a medium-sized bowl, slightly beat eggs
- Whisk in pumpkin puree, stevia, salt, spice, and almond milk
- Pour batter into prepared pan
- Bake for approximately 1 hour
- Check to see if toothpick inserted into center comes out relatively clean
- Remove from oven and allow to cool
