Ingredients
- 1 lb boneless, skinless chicken breast
- 1/2 cup Homemade Mayo
- 3 tbsp curry powder more, to taste
- 1 mango
- 1/4 tsp apple cider vinegar optional
- 1/8 tsp cinnamon optional
- 1/8 tsp nutmeg optional
- 10 grapes
- 1/2 lemon
- 2 tbsp chopped almonds optional
- pink salt
Instructions
- Cook 1 pound of chicken breast, dice and chill
- Peel mango and remove seed, dice
- Toss mango with cinnamon, nutmeg & apple cider vinegar
- Wash grapes and cut in fourths
- Mix together mayonnaise, curry powder, juice from 1/2 lemon, mango mixture, quartered grapes, and chopped almonds
- Add pink salt to taste
- Stir mixture into chicken
- Chill and serve
