Ingredients

  • 1/2 cup coconut oil
  • 3/4 cup canned coconut milk full fat
  • 3/4 cup shredded un-sweetened coconut, diveded divided
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 3 Dropperfuls of Stevia

Instructions

  • In double broiler, combine coconut oil, coconut milk, vanilla, pumpkin pie spice, and Stevia
  • Heat until melted and mixed together
  • Stir in the 1/4 cup shredded coconut
  • Place mixture in refrigerator for about 30 minutes (until moldable, but not solid)
  • Spoon out mixture by heaping tablespoon at a time
  • Roll into balls
  • Roll ball in remaining 1/2 cup of shredded coconut to coat
  • Place in refrigerator or freezer until hardened and for storage
