In double broiler, combine coconut oil, coconut milk, vanilla, pumpkin pie spice, and Stevia
Heat until melted and mixed together
Stir in the 1/4 cup shredded coconut
Place mixture in refrigerator for about 30 minutes (until moldable, but not solid)
Spoon out mixture by heaping tablespoon at a time
Roll into balls
Roll ball in remaining 1/2 cup of shredded coconut to coat
Place in refrigerator or freezer until hardened and for storage
