Ingredients
- 1/2 cup coconut oil
- 3/4 cup canned coconut milk full fat
- 3/4 cup shredded un-sweetened coconut, diveded divided
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
- 3 Dropperfuls of Stevia
Instructions
- In double broiler, combine coconut oil, coconut milk, vanilla, pumpkin pie spice, and Stevia
- Heat until melted and mixed together
- Stir in the 1/4 cup shredded coconut
- Place mixture in refrigerator for about 30 minutes (until moldable, but not solid)
- Spoon out mixture by heaping tablespoon at a time
- Roll into balls
- Roll ball in remaining 1/2 cup of shredded coconut to coat
- Place in refrigerator or freezer until hardened and for storage
