  • 3 eggs separated
  • 3 tbsp softened cream cheese or plain greek yogurt/whole milk/coconut cream/cottage cheese
  • 1/4 tsp cream of tartar
  • 2-3 drops liquid Stevia


  • Preheat oven to 300 degrees
  • Line cookie sheet with parchment paper and spray
  • Separate eggs
  • In small bowl, mix together egg yolks, cream cheese (or yogurt/milk/coconut cream/cottage cheese) and stevia until smooth
  • In another bowl, add cream of tartar to the egg whites
  • Beat whites on high speed until fluffy and form very stiff peaks
  • Fold egg yolk mixture into egg whites carefully until thoroughly mixed
  • Scoop the mixture into 10 even rounds onto cookie sheet
  • Bake for 30 minutes or until golden brown
  • Remove from cookie sheets and cool on a rack/cutting board
  • Store in a plastic baggie or container for a softer bread texture that is chewy

*Can be made into 6 rounds instead for larger slices at 50 calories/slice
