Preheat oven to 300 degrees
Line cookie sheet with parchment paper and spray
Separate eggs
In small bowl, mix together egg yolks, cream cheese (or yogurt/milk/coconut cream/cottage cheese) and stevia until smooth
In another bowl, add cream of tartar to the egg whites
Beat whites on high speed until fluffy and form very stiff peaks
Fold egg yolk mixture into egg whites carefully until thoroughly mixed
Scoop the mixture into 10 even rounds onto cookie sheet
Bake for 30 minutes or until golden brown
Remove from cookie sheets and cool on a rack/cutting board
Store in a plastic baggie or container for a softer bread texture that is chewy
