  • 3.5 oz chicken cut into bite sized pieces
  • 1/2 grapefruit
  • 8 oz romaine lettuce
  • 1/3 cup water or Swanson chicken stock
  • pink salt and pepper, to taste
  • Lemon Ginger Dressing or Simple Girl Citrus Ginger Dressing


  • Heat water (or chicken stock) in skillet over medium-high heat
  • Add chicken and cook until cooked though
  • Remove rind from grapefruit and chop into 1" pieces
  • Add to skillet, cover, reduce heat to low and simmer, stirring occasionally, for 3 minutes
  • Toss romaine in dressing then transfer to plate/bowl
  • Top with chicken mixture
  • Sprinkle with pink salt and pepper
