Ingredients
- 4 bananas mashed
- 1/2 cup flax meal
- 1/2 cup coconut flour
- 1/4 cup almond butter
- 2/3 cup unsweetened applesauce
- 1 tsp vanilla
- 1/4 cup cocoa powder
- 1/4 cup coconut oil
- Stevia, to taste
Instructions
- Line baking sheets with parchment paper
- Melt coconut oil
- Mix in cocoa powder and stevia
- Pour into square or rectangular tupperware container then place into freezer
- Combine bananas, flax meal, coconut flour, almond butter, applesauce, vanilla, and stevia (if desired) in food processor until mixed together
- Remove coconut oil chocolate from freezer and pop out of tupperware onto sheet of saran wrap or foil
- Wrap chocolate in saran wrap or foil then break into small pieces with fingers or crush with spoon
- Stir chocolate piece into cookie dough
- Chill dough in refrigerator for 30 minutes
- Preheat oven to 350 degrees
- Spoon out scoops of 1 tablespoon dough (yields 3 dozen)
- Bake for 15 minutes
