  • 1 lb ground chicken breast
  • 16 oz grated zucchini leave peel on
  • 2 tbsp onion powder
  • 3-4 tbsp cilantro or parsley minced
  • 1 clove minced garlic
  • 1 tsp pink salt
  • 1/2 tsp pepper
  • 3/4 tsp cumin optional


  • Preheat oven to 400 degrees
  • Line baking sheet with parchment paper
  • Toss chicken with zucchini, onion powder, cilantro/parsley, garlic, salt, and pepper (and cumin, if using)
  • Scoop mixture out by the spoonful and form meatballs onto lined pan, flatten slightly if desired
  • Bake 20-25 minutes, or until cooked through
  • If desired, place under the broiler for an additional 2-3 minutes or until browned on top
