Instructions
Preheat oven to 400 degrees
Line baking sheet with parchment paper
Toss chicken with zucchini, onion powder, cilantro/parsley, garlic, salt, and pepper (and cumin, if using)
Scoop mixture out by the spoonful and form meatballs onto lined pan, flatten slightly if desired
Bake 20-25 minutes, or until cooked through
If desired, place under the broiler for an additional 2-3 minutes or until browned on top
