Ingredients

  • 1 medium head of cauliflower cut into bite sized pieces
  • 6 eggs hard boiled
  • 1/3 cup plain greek yogurt
  • 3 tbsp dijon mustard
  • 1/4 cup cucumber finely chopped / diced 
  • 1 tbsp apple cider vinegar
  • 2 tbsp onion chopped
  • pink salt and pepper to taste
  • 2 green onions chopped
  • 1 tsp dill

Instructions

  • Steam cauliflower until tender
  • Separate egg yolks from whites and place in bowl then mash
  • Cut egg whites into bite sized pieces then stir into yolks
  • Stir in yogurt, mustard, acv, onion, cucumber, pink salt, pepper, and dill
  • Scoop mixture into cauliflower and stir until well coated
  • Garnish with green onions
