- 1 medium head of cauliflower cut into bite sized pieces
- 6 eggs hard boiled
- 1/3 cup plain greek yogurt
- 3 tbsp dijon mustard
- 1/4 cup cucumber finely chopped / diced
- 1 tbsp apple cider vinegar
- 2 tbsp onion chopped
- pink salt and pepper to taste
- 2 green onions chopped
- 1 tsp dill

Steam cauliflower until tender
Separate egg yolks from whites and place in bowl then mash
Cut egg whites into bite sized pieces then stir into yolks
Stir in yogurt, mustard, acv, onion, cucumber, pink salt, pepper, and dill
Scoop mixture into cauliflower and stir until well coated
Garnish with green onions
