Ingredients
- 8 oz buffalo
- 9 oz baby spinach
- 8 oz mushrooms quartered
- 1 green pepper cut into bite-sized pieces
- 1/2 cup cottage cheese
- 1 tsp onion flakes
- 1/4 cup Simple Girl Carolina Style BBQ Sauce
- 1 tbsp garlic minced
- 1/2 tsp xanthan gum
Instructions
- Cook garlic and buffalo in skillet over medium - high heat
- Drain liquid then return to stovetop
- Stir in onion flakes, green pepper, mushrooms, and spinach
- Cover and cook until veggies soften
- Stir in BBQ sauce and cottage cheese
- Push veggies to edges of skillet and stir xanthan gum into liquid to thicken sauce
- Remove from heat and stir veggies into sauce
