Ingredients

  • 8 oz buffalo
  • 9 oz baby spinach
  • 8 oz mushrooms quartered
  • 1 green pepper cut into bite-sized pieces
  • 1/2 cup cottage cheese
  • 1 tsp onion flakes
  • 1/4 cup Simple Girl Carolina Style BBQ Sauce
  • 1 tbsp garlic minced
  • 1/2 tsp xanthan gum

Instructions

  • Cook garlic and buffalo in skillet over medium - high heat
  • Drain liquid then return to stovetop
  • Stir in onion flakes, green pepper, mushrooms, and spinach
  • Cover and cook until veggies soften
  • Stir in BBQ sauce and cottage cheese
  • Push veggies to edges of skillet and stir xanthan gum into liquid to thicken sauce
  • Remove from heat and stir veggies into sauce
