Ingredients

  • 1 serving Buffalo Sauce
  • 1 cup cooked chicken breast chopped
  • 3 cups spring mix or lettuce
  • 1/2 red bell pepper chopped
  • 1 mini english cucumber chopped
  • 12 grape tomatoes cut in half
  • 2 tbsp red onion chopped
  • 5 spanish green olives sliced thin
  • 1/4 cup Trader Joes Organic Broccoli Slaw mix
  • 1 oz feta cheese crumbles
  • 1/4 cup plain kefir
  • 1/2 - 1 tsp Ranch Seasoning
  • 1/4 tsp xanthan gum
  • Stevia, if desired

Instructions

  • Mix kefir, Ranch Seasoning, xanthan gum, and stevia (if desired) in small
    bowl and place in refrigerator
  • Pour Buffalo Sauce over chicken in separate small bowl, mixing until well
    coated
  • Place all veggies in container/bowl
  • Pour dressing over veggies, place lid on top, and shake until coated
  • Transfer salad to bowl/plate
  • Top with chicken and feta crumbles
