Ingredients
- 1 serving Buffalo Sauce
- 1 cup cooked chicken breast chopped
- 3 cups spring mix or lettuce
- 1/2 red bell pepper chopped
- 1 mini english cucumber chopped
- 12 grape tomatoes cut in half
- 2 tbsp red onion chopped
- 5 spanish green olives sliced thin
- 1/4 cup Trader Joes Organic Broccoli Slaw mix
- 1 oz feta cheese crumbles
- 1/4 cup plain kefir
- 1/2 - 1 tsp Ranch Seasoning
- 1/4 tsp xanthan gum
- Stevia, if desired
Instructions
- Mix kefir, Ranch Seasoning, xanthan gum, and stevia (if desired) in small
bowl and place in refrigerator - Pour Buffalo Sauce over chicken in separate small bowl, mixing until well
coated - Place all veggies in container/bowl
- Pour dressing over veggies, place lid on top, and shake until coated
- Transfer salad to bowl/plate
- Top with chicken and feta crumbles
