Ingredients

  • 1/2 cup quinoa
  • 1 cup water
  • 12.5 oz canned chicken breast in water or 1.5 cup cooked chicken breast
  • 1 cup chopped celery
  • 1 cup shredded carrots
  • 1 cup shredded cabbage red or green
  • 1/4 cup goat cheese crumbles
  • 1/2 cup hot sauce
  • 2 tbsp olive oil

Instructions

  • Place quinoa and water in small saucepan and bring to boil
  • Cover with lid and reduce to simmer for 15 minutes
  • Combine chicken, celery, carrots, cabbage, and goat cheese in bowl
  • Combine hot sauce and olive oil together then pour over bowl
  • Fluff quinoa with fork after cooked then stir into bowl
  • Serve warm or cold
