Buffalo Chicken Quinoa Salad

- 1/2 cup quinoa
- 1 cup water
- 12.5 oz canned chicken breast in water or 1.5 cup cooked chicken breast
- 1 cup chopped celery
- 1 cup shredded carrots
- 1 cup shredded cabbage red or green
- 1/4 cup goat cheese crumbles
- 1/2 cup hot sauce
- 2 tbsp olive oil
Get Recipe Ingredients
Place quinoa and water in small saucepan and bring to boil
Cover with lid and reduce to simmer for 15 minutes
Combine chicken, celery, carrots, cabbage, and goat cheese in bowl
Combine hot sauce and olive oil together then pour over bowl
Fluff quinoa with fork after cooked then stir into bowl
Serve warm or cold
