Ingredients

  • 5 lbs pork butt
  • 3 carrots chopped
  • 3 onions chopped
  • 2 bunches cilantro 1 bunch whole, 1 bunch chopped
  • 6 cloves garlic
  • 1 tsp coriander
  • 1 tsp oregano
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 6 - 8 cups water
  • 1.5 cup green chili salsa
  • 1 cup green chilis roasted, diced
  • 1/2 cup green onion sliced thin (including tops)

Instructions

  • In large pot, add pork, carrots, onions, garlic, cumin, coriander, oregano, chili powder, and whole cilantro
  • Add enough water to cover and bring to a boil
  • Reduce heat, cover, and simmer until tender (about 3.5 hours)
  • Remove roast from broth once tender
  • Place in baking pan, fat side up, and bake at 350 degrees until well-browned, about 1 hour
  • Drain off fat and shred meat, disregarding fat and bones
  • Stir in salsa, green chilis, green onions, and chopped cilantro
  • Bake another 15-20 minutes, until hot

Great served with Cauliflower Tortillas
