Ingredients
- 5 lbs pork butt
- 3 carrots chopped
- 3 onions chopped
- 2 bunches cilantro 1 bunch whole, 1 bunch chopped
- 6 cloves garlic
- 1 tsp coriander
- 1 tsp oregano
- 1/2 tsp chili powder
- 1/2 tsp cumin
- 6 - 8 cups water
- 1.5 cup green chili salsa
- 1 cup green chilis roasted, diced
- 1/2 cup green onion sliced thin (including tops)
Instructions
- In large pot, add pork, carrots, onions, garlic, cumin, coriander, oregano, chili powder, and whole cilantro
- Add enough water to cover and bring to a boil
- Reduce heat, cover, and simmer until tender (about 3.5 hours)
- Remove roast from broth once tender
- Place in baking pan, fat side up, and bake at 350 degrees until well-browned, about 1 hour
- Drain off fat and shred meat, disregarding fat and bones
- Stir in salsa, green chilis, green onions, and chopped cilantro
- Bake another 15-20 minutes, until hot
