In large pot, add pork, carrots, onions, garlic, cumin, coriander, oregano, chili powder, and whole cilantro
Add enough water to cover and bring to a boil
Reduce heat, cover, and simmer until tender (about 3.5 hours)
Remove roast from broth once tender
Place in baking pan, fat side up, and bake at 350 degrees until well-browned, about 1 hour
Drain off fat and shred meat, disregarding fat and bones
Stir in salsa, green chilis, green onions, and chopped cilantro
Bake another 15-20 minutes, until hot
