  • 3 oz lean ground beef
  • 1/4 cup red onion chopped
  • 1/3 cup green pepper chopped
  • 3 eggs
  • 3 tbsp blue cheese crumbles
  • 1/2 tbsp coconut oil
  • pink salt to taste


  • Brown meat in skillet with peppers and onions over medium-high heat
  • Drain and cover to keep warm
  • Melt coconut oil in separate skillet
  • Whisk eggs then pour into skillet
  • Cover with lid and cook until bubbly
  • Pour meat mixture onto eggs
  • Sprinkle on blue cheese crumbles evenly
  • Fold in half with spatula
  • Place lid on skillet and cook a little longer
  • Transfer to plate
