- 1/3 cup green pepper chopped
- 3 eggs
- 3 tbsp blue cheese crumbles
- 1/2 tbsp coconut oil
- pink salt to taste

Drain and cover to keep warm
Melt coconut oil in separate skillet
Whisk eggs then pour into skillet
Cover with lid and cook until bubbly
Pour meat mixture onto eggs
Sprinkle on blue cheese crumbles evenly
Fold in half with spatula
Place lid on skillet and cook a little longer
Transfer to plate
