Ingredients

  • 2 cups cauliflower rice
  • 2 cups frozen peppers & onions mix
  • 4 oz beef
  • 1 tbsp taco seasoning
  • 1/4 cup plain greek yogurt
  • 2 tbsp salsa

Instructions

  • Heat skillet over medium-high heat
  • Cook ground beef until browned
  • Add taco seasoning and stir
  • Add peppers and onions
  • Put lid on skillet and cook until hot
  • Add cauliflower rice and heat until hot
  • Pour off any excess liquid
  • Move mixture to serving bowl
  • In small bowl, combine yogurt and salsa
  • Spoon salsa yogurt onto Fajita bowl
