  • 4 oz onion finely chopped
  • 1 clove garlic minced
  • 8 oz tomatoes chopped
  • 3 oz chicken breast cooked and cubed
  • 1/4 c fresh basil chopped, or 1-2 tbsp dried basil
  • pink salt to taste
  • pepper to taste
  • 1/8 tsp hot pepper sauce


  • Warm large skillet to medium-high heat.
  • Sauté the onions and garlic in a little water.
  • Stir in the tomatoes, chicken, basil, salt and hot pepper sauce.
  • Reduce heat to medium, and cover skillet.
  • Simmer for about 5 minutes, stirring frequently, until mixture is hot and tomatoes are soft.
