Ingredients
- 4 large eggs
- 4 whites of additional eggs
- 14 oz quartered artichoke hearts drained & chopped
- 1/4 tsp onion powder
- 1/4 tsp crushed red pepper flakes
- 1/4 tsp Simple Girl Lemon Herb Seasoning
- 1/4 tsp pink salt
- 1/8 tsp garlic salt
- 1/4 tsp black pepper
- hot sauce optional
Instructions
- Scramble the eggs and egg whites with the seasonings
- Place the chopped artichoke into two mini-loaf pans (6”x3” each), pour the egg mixture over top. [I use silicone pans for this – got mine at Walmart]
- Bake at 350 degrees until the middle top jiggles just a bit (about 26 minutes), then crank the oven up to BROIL for about 1 minute to firm up the middle
- Let set about 5 minutes and then plate, sprinkle with hot sauce and enjoy
