Scramble the eggs and egg whites with the seasonings
Place the chopped artichoke into two mini-loaf pans (6”x3” each), pour the egg mixture over top. [I use silicone pans for this – got mine at Walmart]
Bake at 350 degrees until the middle top jiggles just a bit (about 26 minutes), then crank the oven up to BROIL for about 1 minute to firm up the middle
Let set about 5 minutes and then plate, sprinkle with hot sauce and enjoy
