Ingredients

  • 1 can full fat coconut milk
  • 1/2 cup cauliflower "rice" chopped fine in food processor
  • 1/2 cup shredded, unsweetened coconut
  • 2 cups grated apple
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • Stevia, to taste

Instructions

  • Mix coconut milk, cauliflower, apple, vanilla, and cinnamon in a pot over med-high heat
  • Reduce heat, cover, and simmer for 15-20 minutes
  • Serve warm or cold (like rice pudding)
  • Top with raisins, nuts, etc. if desired
